What's for dinner? Fried chicken, mashed potatoes, and buttered broccoli


The chicken is breaded with Panko bread crumbs. 
They are Japanese bread crumbs and offer up a nice crunch.
You may find it in the Asian food isle at the local grocery store


Chicken recipe:

2 pounds boneless skinless
chicken breasts,cut in pieces.
2 tablespoons olive oil
1 teaspoon Mrs. Dash
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoned salt

In a small bowl combine spices and olive oil
Mix well.

Defrost chicken breasts and 
cut them in 3-5 pieces from each breast

Tenderize chicken with a meat tenderizing hammer
Cover the chicken with a plastic bag 
when tenderizing so it does not splatter.

Put chicken in a bowl. 
Pour seasoning mixture and coat well.

In a separate bowl, beat 4 eggs

In a third bowl, put 1 cup flour and 
2 cups Japanese bread crumbs


In a large frying pan, heat up 1/4 cup olive oil.
Test the oil and see if it's hot enough.

Dip each piece of tenderized seasoned chicken in the egg mixture first and then in the crumb mixture second.

Pat the chicken in the crumb mixture
to make the coating stick.

Repeat with all the pieces.


Fry chicken until golden brown on both sides 
on medium heat.
Place on paper towel covered plate until ready to serve.

For the broccoli:

Boil 2 cups water
Add broccoli florets
Add 1/2 teaspoon salt to the boiling water
Boil until tender-about 8 minutes
Drain broccoli in a colander
Put it back in the pot and add 2 tablespoons butter

With this simple addition of butter and salt to broccoli, the kids and 
the grown up 'kids' may actually eat it...


You can also serve the fried chicken 
with a side of Caprese salad.
