Food-Lasagna

This is a classic recipe for lasagna. 
The sauce is the same sauce 
as the Makeoverslife spaghetti with meat sauce.

It is tried and true from my restaurant and tweaked many times over the years to the current recipe.
It is truly flavorful and delicious.

Ingredients:

1 POUND GROUND BEEF
1 16 OUNCES CONTAINER RICOTTA CHEESE
16 OUNCES MOZZARELLA CHEESE, SHREDDED
1 BOX LASAGNA NOODLES
2 CANS TOMATO SAUCE
1 TEASPOON GARLIC POWDER
1 TEASPOON ONION POWDER
1 TEASPOON MRS. DASH
1 TEASPOON ITALIAN SEASONING
1 TEASPOON SEASONED SALT

4 TABLESPOONS OLIVE OIL
FOR COATING THE LASAGNA NOODLES

IN A LARGE SAUCEPAN, 
BOIL NOODLES UNTIL TENDER. DRAIN.
COAT NOODLES WITH OLIVE OIL 
TO MAKE THEM EASY TO HANDLE.



IN A MEDIUM SAUCEPAN, 
ADD GROUND BEEF AND SEASONING.




STIR WITH A WHISK UNTIL MEAT IS COOKED.
A WHISK WORKS BEST 
TO KEEP THE MEAT FROM CLUMPING.

ADD TOMATO SAUCE...

SIMMER SAUCE FOR 10 MINUTES
LAYER NOODLES AT THE BOTTOM OF 
A GREASED SQUARE BAKING DISH.


ADD TOMATO SAUCE OVER THE NOODLES.


ADD RICOTTA CHEESE
REPEAT WITH 3 MORE LAYERS FOR A TOTAL OF 4.


SPRINKLE MOZZARELLA CHEESE 
OVER THE TOP LAYER.


BAKE AT 400 DEGREES FOR 30 MINUTES


THE LASAGNA LASTS IN THE REFRIGERATOR COVERED FOR UP TO A WEEK.

Meditation Exercise-Sitting Quiet

                            
                            Sitting Quiet.
               

                Sitting quietly is a great way 
                 to let your whole life turn 
                    off for few moments. 

Meditation takes this concept and creates a deliberate time for you to learn to unwind.
 

Making time in your busy life to actually sit down and be quiet is not as easy as it sounds. 

    Our bodies and minds are so accustomed
    to always doing something that even the thought of sitting quietly with nothing to do seems rather pointless. 


However, sitting quietly is one of the most powerful tools you can use to retrain your mind to become aware and empowered in the   face of daily tasks and choices. 

           Your mind races all day long. 

Turning off all dialogue is a great way to relax,  but it takes some practice. 

         Your mind has to grow into quiet. 

      It has to learn how to be quiet and still.
 

        This exercise can be done anywhere: 
Driving, walking through a store or park, or    sitting in a room with no noise.
 

         Discover how important it is 
           for your mind to be quiet. 

Only from here can we make a spiritual connection to our higher selves—
to God—and 
discover our own highest purpose in life.
 

Quiet is a feeling, not just a word. 
You will know this feeling when your mind comes upon it after some practice. 

    As you learn to quiet your mind, you will    recognize this feeling many 
times throughout the day. 

      It becomes your road to your center. 

    Use it frequently and you will grow as you     work towards greater understanding.
 

        Body still, mind quiet, spirit within.
                           

                            Exercise:
 

              1. Find a quiet spot.
 

               2. Sit down.
 

           3. Clear your mind.
 

   4. As thoughts come up, gently bring your      attention back to just sitting quiet.
 

     5. When you are done sitting quiet,                say to yourself, 

               “I am done now. Peace.”

Expected results:
Throughout the day, a feeling of something familiar begins to drive choices in a new direction-towards peace and surrender.

The more time spent quiet, 
the louder our inner voice sounds 
and we begin to listen to it 
like a child to a favorite story.

...and our connection to our higher selves 
begins to anchor into our 
daily lives in action...

Makeoverslife Food-Crabcakes

 Crab cakes are a delight. They are real easy to make and enjoy as an appetizer or an anytime snack...
Fry to order a couple in a pan of olive oil.




1 CAN CRAB MEAT.

1 CUP JAPANESE BREAD CRUMBS.

1 CELERY STALK, FINELY CHOPPED.

1/3 RED BELL PEPPER, FINELY
    CHOPPED.

½ AVOCADO, FINELY CHOPPED.

2 EGGS, BEATEN.

¼ CUP PARMESAN CHEESE.

JUICE FROM HALF LEMON.

½ TEASPOON GARLIC POWDER.

½ TEASPOON ONION POWDER.

1/4  TEASPOON SALT.

¼ TEASPOON BLACK PEPPER.

4 TABLESPOONS OLIVE OIL
FOR FRYING.

 
  • IN A MEDIUM BOWL, 
MIX ALL INGREDIENTS TOGETHER.
 
  • SHAPE MIXTURE IN SMALL PATTIES.
  • SQUEEZE THEM TOGETHER TO PREVENT THEM FROM FALLING APART WHILE COOKING.
 
  • IN A MEDIUM FRYING PAN, HEAT OIL.
  • FRY CRAB CAKES UNTIL FULLY COOKED AND GOLDEN BROWN.

For the dipping sauce:
1/2 cup mayonnaise 
2 tablespoons Dijon mustard
Juice from 1/2 lemon
In a small bowl, mix ingredients together and stir.
Crab cake mixture may be stored in the refrigerator 2-3 days and cooked to order.
Also, cover the dipping sauce and keep it in the fridge, too.

Makeoverslife-Food: Tuna salad

Tuna salad is a weekly staple...makes a great snack with crackers or pretzels or a healthy lunch to go
6 OUNCES CAN OF TUNA.
1/3 RED PEPPER, FINELY CHOPPED.
1 CELERY STALK, FINELY CHOPPED.
¼ CUP BLACK OLIVES, CHOPPED.
¼ CUCUMBER, PEELED AND FINELY
     CHOPPED.
¼ TEASPOON GARLIC POWDER.
¼ TEASPOON ONION POWDER.
¼ TEASPOON ITALIAN SEASONING.
2 OUNCES CHEESE. EXAMPLES: FETA, CHEDDAR, PEPPER JACK.
JUICE FROM ½ LEMON.
2 TABLESPOONS MAYONNAISE.

  • MIX ALL INGREDIENTS TOGETHER.
